Vegan Thai Red Curry with Tofu

This Thai Red Curry is almost a staple in my house. I make it nearly once in two weeks, because I crave those delicious aromas of basil, ginger, lemongrass, and so many more spices and herbs.


What I love about curries in general are that they're so easy to make in bulk and I can just heat them up with a little bit of rice and there's my quick weeknight meal. In fact, curries get better the next day after they're made because the flavors just really marry one another.


Ingredients:

- 1 can coconut milk (full fat)

- 1 block tofu, cut into large cubes

- 1/2 white onion, cut into large chunks

- 1 red bell pepper, cut into large chunks

- 1 medium carrot, cut into 1/2" rounds

- 1 large zucchini, cut into 1/2" rounds

- 1 Thai chili (I use 2-3 because I love the heat!)

- 3 tbs

- 1 tbs tomato paste

- 1" piece ginger, pressed

- 3-4 cloves of garlic, pressed

- 1 tbs soy sauce

- Salt, to taste

- 1 bunch basil

- 1 lime

- optional: 2 tbs palm sugar/agave/coconut sugar



1. Take about 3 tbs of coconut milk (the thick part) and put it into your instant pot on saute mode. 2. Once the oil starts separating from the cream, add in the red curry paste and the tomato paste. 3. Stir to combine and then add in another 1/3 of the can of coconut oil. Add in the onions, peppers, and carrots. 4. Add in the Thai chili, soy sauce, ginger, garlic, (optionally the sugar) and the zucchini. Stir to combine, and then add in the tofu. Stir VERY gently so as not to break the tofu cubes. 5. Put the lid on your instant pot. Set it to manual on high pressure for 15 minutes. 6. Manual release and then add in your basil and any extra salt, if desired. 7. Serve over some cooked rice noodles or jasmine rice with a squeeze of lime on top and scallions. Don't get tied down to only these veggies - this dish is versatile. You can even use broccoli or cauliflower in this curry. Add in some snow peas if you like. This is one of my most favorite weeknight meals. So easy to put together and so satisfying every single time.
