Spinach Artichoke Pesto

All the deliciousness of the famous dip, but as a meal! I think aside from regular basil pesto, this is my second favorite pesto. Actually, it's a pretty close competition! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ I believe one day, a couple of years ago, I was just inspired by the fact that I had plenty of spinach but not enough basil, and some artichokes that were in a jar. I thought, why not combine everything so that I get more pesto? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

It was a good decision because I was hooked! I love that it has some added greens and nutrients, unlike your regular basil pesto. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Really any pasta would pair well with it. You can even use it as a spread for your sandwiches or wraps. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Here's the recipe:

- 2 cups loosely packed spinach - 1 cup loosely packed basil - 1/2 cup marinated artichokes - 1/4 cup marination liquid - 2-3 cloves of garlic - 1/2 jalapeno (or 1/2 teaspoon black pepper) - 1/2 lime - juiced - salt to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ The process: Simply blitz these together in your food processor, and use it immediately or store it in the fridge for up to 2 weeks. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
