One Pot Miso Tahini Ramen

Are you in the mood for some noodles? If so, here is an easy ramen dish to throw together in just about 15 minutes from start to finish, and the best part? All in one pot! Let’s make some creamy Miso Tahini Ramen.



Ingredients:

  • 2 packs of noodles

  • 2 cups broccoli florets

  • 2 tablespoons tahini

  • 2 tablespoons miso

  • 2-3 cloves garlic, crushed

  • 1" piece ginger, crushed

  • 2 scallions

  • 1 teaspoon toasted sesame oil

  • 1 teaspoon rice vinegar

Instructions:

  1. In a shallow pot or skillet with a lid on medium heat, throw in the tahini, miso, garlic, ginger, and just a splash of water. Mix through and then add in the whites of your scallions. Add in your broccoli and your noodles (break them apart if you must).

  2. Add enough water to cover them up. Try to submerge the noodles into the water as much as possible. Let these cook up, stirring occasionally until the broccoli is nice and tender and the noodles are fully cooked.

  3. Turn off the heat and add in toasted sesame oil and rice vinegar. Bowl it up, add toppings of your choice, and devour immediately!



Make these your own by adding whatever you love in your ramen.


Here are some possibilities:

  • Chili Oil or Sriracha

  • Baked Tofu: cut tofu block into 1/2” by 1” pieces and place them on a silicone-lined baking tray at 400°F for about 30 minutes, flipping them halfway.

  • Scallions

  • Sesame seeds

  • Toasted seaweed

  • Lemon wedge
